Bartending Vendor Spotlight: Fun Coast Bartending Q&A With Owner Mark Woods

If you’ve spent any time around the Central Florida event scene, chances are you’ve seen the FunCoast Bartending team shaking, pouring, storytelling, or honestly just stealing the show. They’re one of the most well-known mobile bartending companies in the area, and for good reason.

We sat down with Mark Woods, the owner of FunCoast Bartending, who launched the company back in 2012 and is about to celebrate a major milestone: their 3,000th event. Yes, three thousand. And somehow he’s still smiling, still upbeat, still telling cocktail origin stories like he was born behind a bar.

Below is our full Q&A with Mark, a look into who he is, how FunCoast grew into the powerhouse it is today, and why our couples at Riverside Pavilion adore working with him and his team at our venue.

1. Introduce Yourself

Q: Can you tell us a little about your bartending company and how it all began?
A: Mark laughs and says FunCoast started “accidentally on purpose.” Back in 2012 he was working full-time at the Golden Lion, where he’d been a bartender for ten years. His regulars began asking if he would bartend their private parties, and one gig turned into another, then another.

What started as Mark and a couple of friends helping out turned into a full-scale operation. That first year, he had about 40 events. This year, he is at 395 and counting. Since 2021, he has consistently hit 350-plus events a year, with a team ranging from 20 bartenders to as many as 35 when needed. The most he’s ever done in a single day is ten events.

He became the in-house bartender for Channel Side in 2016, then Museum of Arts and Sciences in 2017, and the Center of Deltona in 2019, racking up 500-plus events at MOAS and over 600 at Deltona and Channel Side.

FunCoast works frequently at Riverside Pavilion, and in regards to satisfaction in service, an August analysis of 25 events in general, Mark realized something wild: 24 of those 25 clients were repeat customers. Only one was new. That says everything about this man’s reputation and the kind of experience you will have with booking.

2. Signature Style

Q: How would you describe your bartending style or approach when working weddings and special events?
A: Mark says FunCoast’s approach is simple: storytelling first, frills last.

“Yes, we pour great drinks,” he says, “but the fun part is the story behind them.” When he’s making a cocktail, he loves explaining where it came from, how it was created, and why it fits the event.

Their style is fast, friendly, accessible, and unpretentious. They don’t overcomplicate things. They don’t act above anyone. They’re just genuinely entertaining people who happen to be extremely good bartenders.

“You can’t have fun without FunCoast,” Mark jokes, and he’s kind of right.

3. Crafting the Menu

Q: Do you help couples or clients create custom drink menus? What does that process look like?
A: Absolutely. FunCoast offers full menu consultations. Couples can come in with specific favorites, like “This is my drink, this is his drink,” or they can give Mark a theme to build around, like summertime cocktails or cozy winter drinks.

FunCoast is big on options because a good menu helps non-drinkers or new drinkers choose something they’ll enjoy. Mark always tries to include at least one vodka, one rum, and one gin-based cocktail to keep things inclusive.

They also work closely with budgets. If you want signature drinks without breaking the bank, Mark will build a menu that fits your vibe and your price point.

4. Specialty Cocktails

Q: What signature cocktails are the most popular right now? Do you have any favorites you love making at Riverside Pavilion?
A: Espresso martinis are having a major moment. Saint Germain cocktails remain crowd pleasers, and classic margaritas never left the throne. Lately, though, Mark is seeing a surge in Palomas and his personal favorite variation, the Matador, which is a pineapple lime margarita twist.

“Tequila is definitely the trend right now,” he says.

5. Experience at Riverside Pavilion

Q: What do you love most about bartending events at Riverside Pavilion?
A: Immediately, Mark mentions the logistics, something couples might not think about, but bartenders definitely do. Riverside has a built-in bar, a rolling bar, and access to ice on site. At many venues, ice is an extra $200 charge. Not here. Brides love that, and so do bartenders.

He also points out the waterfront view, the easy parking, and how smooth the venue is to get to. But above all, he says the energy of weddings at Riverside is consistently good, and our team is always fully present, which is rare in the venue world.

6. Trend Talk

Q: Are you seeing any fun bar trends for 2025?
A: Mocktail bars are rising in popularity, espresso martinis are still at the top, and margarita variations of all kinds continue to dominate. Themed cocktail menus like coastal, retro, or “his and hers” menus are also huge.

7. Must-Have Add-Ons

Q: What upgrades or add-ons do clients love?
A: His and hers cocktails are almost standard these days, but champagne towers are making a comeback, too. Custom garnishes, cocktail classes, and upgraded mixers are also popular.

FunCoast even offers group cocktail classes as an add-on, which is perfect for bridal parties.

For Riverside Pavilion, when booking bartending, you, of course, may want to think of booking our second room called "The Fishing Room," where there is a standalone bar built in, and a dance floor in the main room for dancing the night away!

8. Safety and Professionalism

Q: How do you ensure responsible service throughout the night?
A: This is where Mark gets serious. He’s been doing TIPS training and Responsible Vendor Training for over 10 years. He doesn’t play around with guest safety.

FunCoast does not provide alcohol, which actually benefits the client’s budget, while also helping make sure the bar runs responsibly. They avoid overpouring, discourage shots, and intervene if someone is requesting excessive amounts.

9. Working With the Venue Team

Q: What’s it like working alongside the Riverside Pavilion staff during events?
A: Mark says our team is one of the biggest reasons he loves the Pavilion.

He works at many venues where no one from the staff stays throughout the wedding, which leaves vendors on their own. At Riverside Pavilion, someone from our team is always on-site, ready to help, problem-solve, or support vendors if something unexpected happens.

“They’re attentive, supportive, and collaborative,” he says. “It makes a huge difference.”

Cathy & Eric’s Riverside Pavilion Wedding – A Day of Love by the River

In the golden glow of a Florida evening at Riverside Pavilion, Cathy and Eric celebrated their love story in a setting as warm and radiant as their hearts. This Port Orange venue sits beside the Halifax River, offering a wonderful waterfront backdrop for loved ones to celebrate. Instead of focusing on décor or details, their day was all about genuine emotion – joyful tears, heartfelt laughter, and the embrace of family – all set against the venue’s romantic riverside charm.

A Romantic Riverside Ceremony

Under a canopy of greenery and open sky, Cathy and Eric share their first kiss as husband and wife on the Riverside Pavilion’s waterfront deck.

Cathy and Eric’s ceremony took place on the Pavilion’s back deck overlooking the peaceful water. With palm trees rustling in the gentle breeze and soft waves lapping at the shore, the scene felt like a dream. They exchanged vows to the natural melody of wind in the palms and water against the banks, their words nearly carried on the wind. When the officiant pronounced them husband and wife, their first kiss was met with a wave of cheers. In that moment, time seemed to stand still – the newlyweds held each other in a loving embrace, framed by a floral arch and the shimmering river. It was pure magic, the start of forever sealed with a kiss as the late afternoon sun dipped low and cast a golden hue over the water.

An Unforgettable First Dance

As day turned to dusk, celebrations moved inside the Pavilion’s charming banquet hall. Under the soft glow of twinkle lights and a sparkling chandelier, Cathy and Eric took to the dance floor for their first dance. They held each other close, swaying gently while the river glimmered just outside the big windows. In that moment, it felt like they were the only two people in the world. Cathy rested her head on Eric’s shoulder, and he pulled her in tighter as their favorite song played. Emotions ran high – happy tears in the bride’s eyes, a beaming smile on the groom’s face – as their guests looked on, utterly moved. The energy was high and the love in the room unmistakable. When the song ended, they paused, forehead-to-forehead, soaking in the joy of officially being Mr. and Mrs. It was a moment they would remember for the rest of their lives – an intimate dance witnessed by all who loved them.

Outside on the wrap-around patio, the sky was painted with sunset colors. Just after their first dance, the newlyweds slipped away for a brief moment alone by the water’s edge. The sun had just set, leaving behind a rosy twilight that reflected off the river’s surface. In that quiet interlude, Cathy and Eric laughed together about how perfect the day had been so far. The warm light shimmered on the water as they shared a few private whispers and another sweet kiss. Overhead, as dusk deepened, the first stars began to twinkle. Hand in hand, the couple returned to their reception ready for the night’s festivities, carrying that golden-hour magic in their hearts.

For Cathy and Eric, the reception wasn’t just about their own celebration – it was about family coming together in joy. After a few tender minutes of the couple lost in each other during the first dance, they welcomed their parents to join them on the dance floor. There were few dry eyes as Cathy gently danced with her father, and Eric with his mother, each duo sharing a tender moment of pride and love. In the photo above, Eric is seen swaying with his mom, her smile as radiant as his – a mother-son moment they’ll treasure forever. These special dances kicked off a flurry of heartfelt festivities. Soon, the dance floor filled up with guests of all ages: little nieces and nephews twirling with their grandparents, uncles and aunts forming a circle around the couple, and friends from every stage of Cathy and Eric’s lives jumping in to celebrate. Laughter echoed through the hall as loved ones toasted the happy couple and showed off their best moves. Joyful energy pulsed in the room; at one point, Cathy’s grandmother was spotted doing a playful spin with the groom, much to everyone’s delight! It was not simply a party – it felt like one big family reunion, full of warmth and exuberance. The Pavilion’s space was alive with music and dancing, yet even amid the excitement, you could feel the peaceful ambiance of the river just outside, lending a soothing backdrop to all the fun.

Everywhere you looked, there were meaningful family moments unfolding: a group hug with college friends by the patio doors, a tearful embrace between the bride and her sister, and a triumphant lift of the groom by his gleeful groomsmen in the center of the dance floor. These candid snapshots of happiness told the story of not just a marriage, but of two families uniting. Love and laughter were truly the themes of the night, and Cathy and Eric made a point to join every group, dance with every cousin or childhood friend, and let each person know how much it meant to have them there. The sense of togetherness was tangible – everyone felt like an integral part of the celebration.

The French doors to the patio were opened, and a balmy night breeze drifted in, carrying the faint scent of saltwater and night-blooming flowers. In the quiet moments between music and laughter, they realized how perfectly this day had come together – the nature, the family, the celebration all in harmony around them. Before departing, the newlyweds were surprised with a spontaneous final dance – this time joined by every guest in a big circle on the patio. Under the stars, they all swayed and sang together to an upbeat classic, creating one final joyful memory. Cathy’s head leaned on Eric’s chest as they looked around at the faces of everyone they love, all singing in unison – an image of pure happiness neither will ever forget.

When it was time to say goodnight, Cathy and Eric left hand-in-hand through a tunnel of sparklers held by their cheering family and friends. The night air was filled with applause, well-wishes, and a lingering sense of magic. As they drove off into the night, the Halifax River glistened beside them, almost as if it were waving goodbye and congratulations.

Firewater Concert at Riverside Pavilion: A Night to Remember

Last Thursday evening, the Riverside Pavilion welcomed locals, neighbors, and music-lovers alike for a spectacular night of live country music featuring Firewater. Set against the stunning backdrop of the Halifax River and the open space of the indoor/outdoor space of The Pavilion, the event embodied everything that makes our venue a community favorite — great music, good company, and a shared cause for community.

Celebrating with Purpose

From 5:00 PM to 9:00 PM attendees enjoyed high-energy performances, free line dance lessons at the start of the evening, and food-truck featuring Donut NV and Mango Mike’s, under the stars. The concert also served as a platform for supporting the cause behind the event, Speak Up, Tomorrow Needs You, and we’re deeply thankful for the generosity of every guest who showed up, cheered, and contributed.

• Live music from Firewater kept the crowd moving and engaged from the first note to the final encore.
